Nut-Butter Cookies (5-Ingredients, Gluten Free, Low Carb)

With only 5 ingredients and 20 minutes, you can make these Nut-Butter Cookies. Simply pick your favorite nut-butter, such as peanut, almond, macadamia or cashew, gather the remaining 4 ingredients, and get to baking!

The Famous Cookies

Well, these might not be famous literally, but they should be! I have been making these cookies for as long as I can remember. For years, I only used peanut butter and each time played around with different peanut butters and flours until I found my favorite ones! I think I have finally perfected them!

As of lately, I have been switching it up and testing out different nut-butters; without fail, the recipe tastes amazing every single time! If you want that classic melt in your mouth peanut butter cookie, stick with good old fashion organic creamy peanut butter. I promise you will not be disappointed!  You want organic peanut butter since conventional peanuts are high in pesticides and fungus, and contain aflatoxin, which is a potential carcinogen.

But I am Allergic to Peanuts...

If you are allergic to peanuts or following a strict paleo diet, you can use almond butter, cashew butter or sunbutter. I love how the cookies turn out when I use MaraNatha No-Stir Raw Maple Creamy Almond Butter. I use less sweetener when using the maple almond butter because it contains maple sugar. 

But I am Allergic to Nuts...

If you can not eat nuts due to a nut or tree-nut allergy, no worries because you can modify the  recipe! Simply use tigernut flour in place of almond flour and peanut butter or sunflower seed butter (sunbutter) instead of nut-butter.

Cookies For Even The Pickest Eaters

I have yet to find one person that has not fallen in love with these cookies. Everytime I visit my parents house, these are the cookies they ask for. When I meal prep for clients, their dessert of choice is always these cookies. They are that good ya'll, and you do not have to be a professional baker to whip them up!

Nut-Butter Cookies

Finally, a cookie recipe that is not only fully customizable and easy, but so good that you will be questioning how on earth they are healthy. With only 5 ingredients and 20 minutes, you can make these Nut-Butter Cookies. Simply pick your favorite nut-butter, such as peanut, almond, macadamia or cashew, gather the remaining 4 ingredients, and get to baking! 

Makes: 12 cookies
Prep time: 10 minutes
Cook time: 8 minutes

Ingredients:

  • 1 cup creamy nut-butter*

  • 3/4 cup golden monk fruit sweetener, or coconut sugar

  • 1/2-3/4 cup blanched almond flour**

  • 2 large pasture-raised eggs, room temperature

  • 1 teaspoon baking soda

Instructions:

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. Add nut butter and monk fruit sweetener to a bowl and mix with an electric mixer until combined.

  3. Add egg and mix until you can no longer see the egg.

  4. Add baking soda and almond flour (1/4 at a time) and mix until a dough comes together. Different nut-butters have different consistencies; add almond flour just until a dough comes together (the dough should still be slightly sticky).

  5. Shape into 12 equal squares and place on baking sheet.

  6. Bake for 8 minutes. At the 6 minute mark, open the oven door, pull out the tray, and carefully press each cookie down slightly with a fork. Bake for another 2 minutes.

  7. Remove from oven, cool and enjoy!

Notes: *If you are allergic to nuts or tree-nuts, you can substitute the nut-butter for either peanut butter or sunbutter. Please note that if using sunbutter, the cookies might turn out green.  **To further modify this recipe to make it nut free and tree-nut free, replace the almond flour with tigernut flour.
