Healthy Queso Dip (Paleo, Vegan)
A creamy, dairy-free queso that mimics the popular velveeta and ro*tel cheese dip, but without the unwanted processed ingredients. Sweet, spicy and perfectly satisfying. This Healthy Queso Dip makes a great appetizer for any party, social gathering, superbowl party or even a night at home with friends and family!
I grew up on chips and queso, specifically the ro*tel dip that is made with a block of velveeta cheese.
What's The Secret?
I wanted to recreate my favorite childhood appetizer, but without the dairy or processed ingredients. The secret to this creamy, dairy free queso dip is cashews! Unlike other nuts, cashews have a neutral flavor and when blended, get velvety smooth. I suggest raw cashews since roasted ones can create an odd flavor for the queso.
This Healthy Queso Dip contains a few other ingredients that offer awesome health benefits:
Apple cider vinegar
Nutritional Yeast is an inactive form of yeast used as a food. It is a complete protein, high in B vitamins, and also contains fiber, selenium, and potassium. It makes foods taste cheesy, but it does not contain any dairy or cheese. Nutritional Yeast is a staple in my kitchen.
Apple Cider Vinegar
Apple Cider Vinegar has been used in home remedies for centuries and contains a ton of health benefits. ACV increases the benefits of vitamins and minerals in your food, helps cancel out some of the impact carbs you consume, relieves symptoms of acid reflux and can help lower blood pressure. I like to add 1-2 teaspoons of apple cider vinegar in 8 oz of filtered water and sip it in the morning upon waking up. Just be sure to get raw, unpasteurized apple cider vinegar for optimal health benefits.
Turmeric is most well known for its bright orange color, but has an amazing nutritional profile: it boosts brain and cognitive function, lowers inflammation, detoxifies the body, supports joint and muscle health, and improves mood, just to name a few. It also gives this queso dip its beautiful and bright yellow color.

Healthy Queso Dip
A creamy, dairy-free queso that mimics the popular velveeta and ro*tel cheese dip, but without the unwanted & processed ingredients. Sweet, spicy and perfectly satisfying.
Makes: ~3 cups
Prep time: 10 minutes
Cook Time: 10 minutes
1 cup raw organic cashews, soaked for 4+ hours in water, then drained
1 cup unsweetened dairy-free milk, or water
1 (14.5 oz) can diced tomatoes with green chilis, preferably no salt added
1/4 cup nutritional yeast
1 1/2 tablespoons fresh lemon juice
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon turmeric
1 teaspoon sea salt
In a high-speed blender, or food processor, add cashews, almond milk, liquid from the can of diced tomatoes, nutritional yeast, lemon juice, apple cider vinegar, and spices.
Blend or process until smooth and creamy.
Add tomatoes and green chilis and pulse 2-3 times, still making sure to leave some chunks in there.
Add the dip to a crockpot and warm it up for 2-3 hours until ready to serve. You can also transfer to a small saucepan and heat until warm if serving immediately. However, the flavors really develop slowly in a crockpot.
As the dip warms, the flavors really develop and come together.
Serve with gluten-free chips or freshly sliced veggies!
